Sàigòn Spice Market's Pho Noodle with Simple Vegetable Broth/Soup Recipe

INGREDIENTS

5-6 large beets (for taste and color), 1 cabbage, 3-4 large carrots, 1-2 large red or yellow onion(s), 1/4 or 1/2 of a large ginger root, 1-2 medium size Daikon, Sàigòn Spice's PHO KIT, 10 tablespoon of fish sauce (optional or replace with 1 tablespoon of salt for vegan), 10 quarts of water, dry pho noodle.

Pho Condiments: White Enoki & Shitake mushrooms, chopped scallion, hoisin sauce, siracha chili, bean sprout, Thai basil, beef slices and cooked beef ball (for meat lover).

DIRECTIONS

1) In a 15-20 quarts pot, pour in 10 quarts water. Place pot of water on stove and start heating water over high heat.

2) Peel large onion(s) and cut away both ends. Peel Daikon and cut into chunks. Cut portioned ginger root in half.

3) Grill both ends of onion(s) and grill the ginger halves in a hot pan for 2-3 minutes or until brown grill marks appear.

4) Peel and cut carrots 🥕 and beets into chunky pieces. Cut cabbage into 4 parts (cut in half then cut half of 2 halves).

5) The simple Fresh Vegetable Pho Broth/Stock: Place prepared cabbage, carrots, grilled onion(s), grilled ginger, and daikon in 10 quarts boiling water and cook for 20-30 minutes. After 20-30 minutes, remove cabbage and onion(s). Add water back to the 10 quarts line. Prepare and place Saigon Spice Market's Pho Spice Bomb provided into stock/soup. Place Pho Seasoning and add 5-10 tablespoon of fish sauce (replace with 1 tablespoon of salt for vegetarian recipe-taste test as you go-don't over salt). Stir until Pho Seasoning dissolved and allow to boil on high heat. After, broth is boiled. cook for additional 15 minutes on medium heat (control boiling over) to release the spices. Remove Pho Spice Bomb. Congratulation! you just made simple and healthy vegetable pho broth.

6) Special Holliday Ruby Veggie Pho Broth: Boil water in a small pot. After water is boiled, add in prepared beets. Cook for 5 minutes or until ruby color appears. Add beets and ruby color broth to step 5 above. Add more beets till it reaches red-ruby color of your preference. Now you have a beautiful Halloween theme pho broth that taste exceptionally good.

7) For Pho Noodle, follow the recommended instruction package on dry pho noodle and cook it. For best result, place dry pho noodle in water for 20-30 minutes then follow direction on dry noodle package and cook it. Test noodle and make sure noodle is thoroughly cooked before draining and rinsing noodle.

NOTE: The secret to a successful pho broth is not to miss the following steps. Grilling onion and ginger, using daikon, and using Saigon Spice Market's Pho Flavor Bomb which includes Pho Seasoning and Pho Spice Bomb.

Serving Vegetarian Ruby Pho Noodle: In a large bowl place a handful of cooked pho noodle, place cooked/steamed white enoki and shitake mushroom on top, pour boil ruby pho broth in; making sure to get some carrots, beets, and daikon in the bowl. Look at that beautiful ruby color of your Holliday theme vegetarian ruby pho noodle soup. It taste fantastically delicious!

Serving Ruby Beef Pho Noodle: In a large bowl place a handful of cooked pho noodle, place thin slices of beef and a few cooked beef ball on top of bowl, pour boil ruby pho broth in; making sure to get some carrots, beets, and daikon in the bowl. Garnish with fresh white enoki mushroom. Look at that beautiful ruby color of your Holliday theme beef ruby pho noodle soup. It taste exceptionally good!
